Recipe: Avocado, Egg and Tomato Salad

Like most other things in Indonesia, buying food is cheap. I love the fact that I can buy three lovely, ripe avocados for 12,000 IDR (about 80p). Avocados were more of a treat when I lived in England. They were usually tiny and sometimes I’d have to wait days and days for them to be ripe enough to eat. Well, I’m making the most of it here. I’ve been eating loads of the stuff. Bring on all of the health benefits.

Here is my very simple avocado salad. It makes enough for one person.

Ingredients

Half an avocado, chopped and mushed up a bit

1 hard boiled egg, chopped

1 large tomato, chopped into small pieces OR 5 cherry tomatoes (or however many you want), halved

Pepper

Method

1. Just mix the avocado, egg and tomato together in a bowl. Season with pepper.

2. Serve the mixture in the bowl or in the half avocado shell.

I served this with two pieces of toast.

Variations

Add lemon juice, cucumber or peppers, or all three.

Add prawns, mmm.

I’m also very excited to try this chocolate pudding which uses avocados! I’ll let you know the outcome when I get around to making it.
