No Thanksgiving and an Omelette Wrap
I’m an avid blog reader. I think it’s my tendency to be extremely nosy. Most of the blogs I read are from the US, so lately I’ve seen loads of Thanksgiving posts. Now, I’m going to be honest, a few years ago I wasn’t even 100 percent sure what Thanksgiving was. It wasn’t until I went to live in South Korea and made American friends that I fully understood and realised what a big thing it is. After reading so many blogs featuring recipes for stuffing, turkey and pumpkin (I’m not even sure I like pumpkin) things, I’m quite jealous that we’re not celebrating.
However, it’s only 5 weeks until Christmas! I love this time of year. My birthday, first wedding anniversary and Christmas all happen in December. It’s a full month. I love seeing all of the decorations and Christmas lights around. It has such a lovely atmosphere. Unfortunately the village we are staying in at the minute pretty much closes down over the Winter months, so there’s not much happening here. We’ll be moving on at the end of the month though. Hopefully we’ll visit a Christmas market somewhere. Christmas markets take me back to my university days in Leeds, when I always enjoyed the German beer and mulled wine a bit too much. I really want to go to Colmar, here in France. It looks amazing.

This December is going to be even busier for us. We’re house sitting in two different houses, so there will be new areas to explore and animals to adapt to. I hope they have decorations in their houses, although we’re quite used to adapting to different ways of celebrating Christmas after living in Korea for two years. At least this year I will have a full kitchen, including an oven to cook a real Christmas feast.
Enough of the Christmas talk for now. Onto yesterday’s food.
I had overnight oats and a coffee again for breakfast. For lunch there were no dinner leftovers so I made an omelette wrap with cheddar cheese, ham, cucumber and a sprinkling of feta cheese. It was really good and so filling.

Omelette Wrap
Ingredients
- 2 eggs
- 1 tbsp milk
- Butter for pan
- Filling of your choice. I used Cheddar cheese, 2 slices of ham, cucumber and feta cheese.
Directions
- Whisk the eggs with the milk and some salt and pepper.
- Melt the butter in a large frying pan, until it’s bubbling.
- Pour in the egg mixture and leave it to fry for 2 minutes. Don’t stir the egg.
- When it’s golden underneath either flip it over and cook the other side, or if you’re using cheese, sprinkle grated cheese over the omelette then put it under a hot grill for 2-3 minutes.
- When it’s done, put it on a plate, add your fillings and roll it up.
I got up early for my workout again yesterday. It was a short one. 14 minutes 7 seconds to be exact. I did this No Equipment Needed Workout. I ended up doing the push ups on my knees (because my upper body strength is pathetic) and I did crunches, not full sit-ups. I’m planning to do this again next week with the aim of beating my time. I love little challenges like this.
