A Lazy Sunday and More Recipes
I felt completely recovered from my mild, mystery illness yesterday morning. Maybe it had something to do with the fact that I didn’t wake up until 11am! Oops. I didn’t want to be woken by an alarm, so I didn’t set one, but I didn’t think I would sleep that late. Oh well, Sunday is supposed to be the day of rest and all of that. By the time I ate my overnight oats it was closer to lunch time.
I did some work, then I was hungry a few hours later so I made some couscous with tomato, cucumber, apple, green and yellow pepper, olives and feta cheese. It was really tasty. I make this for lunch quite a lot, but according to Jimmy, yesterday’s was my best yet.
I think that’s because I knew I was going to take photos of it…
I’d planned to go for a run yesterday afternoon, but for the millionth time in two weeks I found ‘better’ things to do. Skyping with my dad, hoovering, washing clothes, anything but exercise really. I don’t know what’s happened. I haven’t done anything since I started this house sit two weeks ago. Maybe I got too used to having a gym in the house on our first ‘sit’. Jimmy is not going for my idea of buying a treadmill. Even though I said I don’t mind dismantling it every month to put in the car when we move on. I don’t see the problem.
It was quite late before I felt hungry enough for dinner yesterday. I did only eat lunch at 3pm. I tried out a recipe I’d found in a Good Food magazine. The woman we are house sitting for loves cooking and has probably hundreds of these magazines in the house. I love looking through them, but my ‘recipes to try’ list is just getting longer and longer. I think I might have to start eating 5 meals just so I can fit them all in. So my new recipe yesterday was a simple Mushroom and Rice dish.
I ate it with this Over Roasted Cauliflower to add some spice. On the cauliflower I used chili powder and herbs of Provence. It was HOT HOT HOT!
I’m definitely going for a run today.
